Easy Italian Cucumber Salad

I just whipped up this salad for a picnic tomorrow. It was very quick and easy. There aren't many ingredients and most you probably have on hand.
It is the season for picnics and cookouts and easy recipes are always winners!

Easy Cucumber Salad

2-3 Cucumbers
3 Roma tomatoes
1/2 small red onion
Bottled Italian salad dressing
Fresh purple basil
Cracked black pepper
Mozzarella Cheese, fresh

Wash the veggies. Slice Cucumbers into thick rounds then quarter the rounds. Dice tomatoes. Combine those in a large bowl. Dice onion and add to bowl. Crack some black pepper over veggies.  Snip some fresh purple basil in there. As much as you like. Stir all that together then pour about half a bottle of Italian dressing over veggies and stir. You may want more dressing, but this amount looked like enough for me. Cover and chill for several hours before serving. Just before serving, stir in some fresh mozzarella cheese.

Kabobs

I had been wanting some grilled kabobs all weekend long. Finally on Tuesday I was able to make some.
I used one package of sirloin, 2 large boneless, skinless chicken breasts, two green peppers, two red peppers and two medium-large onions.

Cut sirloin and chicken into chunks. Do the same for the veggies. I put the sirloin and chicken in separate containers. The veggies layered in one dish. Pour some of this yummy, Honey Teriyaki, marinade over the meat and let marinate for a few hours.


I poured some over the veggies probably 30 minutes before cooking the kabobs. You can marinate them as long as you like.


Slide those goodies on the kabobs and grill until done!

I'm Back...

Wow, its been a while since I last blogged. I have kept up with reading many blogs, but I just haven't taken the time to actually post anything. We had a wonderful visit with family while they were here. The kids played so much and had the best time. While I was away I received a blog award! It came from Robin @ www.robinlynne.org, please check out her blog.
Also while away, my daughter had her tonsils and adenoids removed. I have been playing nurse for several days. She is feeling better everyday. I've read two great books and done lots of laundry. Our garden has been giving us lots of goodies and its been a joy to pick, cook and most importantly eat all those fresh veggies. We're also in the process of "putting up" pickle. So..its been a pretty busy summer so far and we're having a good time. Well, time to get back to the pots on the stove. I'll try to post more often!
