Game Day Appetizer

Football season is in and we all like to snack while watching the big game. This cheese ball is so easy to make...with only 4 ingredients...and even better...it tastes great!

Spicy Cheese Ball

8 oz. finely shredded sharp cheddar cheese
8 oz. tub softened cream cheese
8 oz. tub softened chives and onion cream cheese
2 teaspoons ground red pepper (this is enough for us, but you may want to add another 1/2 tsp.)

Mix all into a ball, wrap in plastic wrap and chill for a few hours.

A Southern Treat.....Pineapple Casserole

This recipe might sound strange to some, but it really is very delicious. I like it as a side dish, but many like it as a dessert.

Pineapple Casserole

1 cup sugar
6 tablespoons flour (all-purpose)
2 cups shredded sharp cheddar cheese
Two 20 oz. cans pineapple chunks or tidbits, drained..reserve 6 Tbsp of juice
1 cup Ritz cracker crumbs
1 stick butter, melted

Preheat oven to 350 degrees. In mixing bowl, combine sugar and flour. Gradually stir in cheese. Add pineapple and stir well. Pour mixture into a greased casserole dish. Combine cracker crumbs, butter and juice and spread on top of pineapple mixture. Bake for 25-30 minutes or until golden brown.
