Cheesy Hasbrown Casserole

Who doesn't love potatoes? Who doesn't love cheese? Put them together and oh boy does it please! Ok, that might have been a little corny, but really..cheese and potatoes just screams "comfort food". Here is my take on a hashbrown casserole. I love it extra cheesy. Its sooo good!

Cheesy Hashbrown Casserole

1 bag frozen shredded hashbrown potatoes
1 stick of butter, melted
1 can cream of chicken soup
1 pint sour cream
3 cups shredded sharp cheddar cheese, divided
couple tablespoons of finely chopped onion or a few shakes of onion powder (just add this to your own personal liking)

Combine melted butter, soup, sour cream, 2 cups of cheese and onions. Mix well, stir in potatoes. Pour into a 9x13 greased casserole dish. Top with remaining 1 cup cheese. Bake at 350 degrees for 45 minutes to 1 hour.

A Southern Treat.....Pineapple Casserole

This recipe might sound strange to some, but it really is very delicious. I like it as a side dish, but many like it as a dessert.

Pineapple Casserole

1 cup sugar
6 tablespoons flour (all-purpose)
2 cups shredded sharp cheddar cheese
Two 20 oz. cans pineapple chunks or tidbits, drained..reserve 6 Tbsp of juice
1 cup Ritz cracker crumbs
1 stick butter, melted

Preheat oven to 350 degrees. In mixing bowl, combine sugar and flour. Gradually stir in cheese. Add pineapple and stir well. Pour mixture into a greased casserole dish. Combine cracker crumbs, butter and juice and spread on top of pineapple mixture. Bake for 25-30 minutes or until golden brown.

Cheese, Glorious Cheese

Last night I made some of my girls' favorite foods. I think my oldest fell in love with me all over again! Cheeseburgers, baked beans and macaroni and cheee. I think my husband enjoyed it right much as well;-)
So today I'll share the Macaroni and Cheese recipe with you all. It is a Paula Deen recipe and uses the crock pot. It is soooooo good!

Creamy Macaroni and Cheese

2 cups uncooked elbow macaroni
1/2 stick butter, cut into pieces
2 1/2 cups shredded cheddar cheese (or you can add a bit more like I do)
3 eggs, beaten
1/2 cup sour cream
1 (10 3/4 oz) can condensed Cheddar cheese soup
1/2 teaspoon salt
1 cup whole milk (2% works fine too)
1/2 teaspoon dry mustard
1/2 teaspoon black pepper

Boil the macaroni in a 2 qt sauce pan in plenty of water until tender, about 7 minutes. Drain. In same pan, mix butter and cheese. Stir until the cheese melts (this will look like a big glob of cheese). In crock pot, combine cheese/butter mixture and add the eggs, sour cream, soup, salt, milk, mustard and pepper and stir well. Then add drained macaroni and stir again. Set crock pot on low and cook for 3 hours, stirring occasionally. Now..I cook on high setting and its done in 1 1/2 hours. I stir often to break up that cheese glob.
