Maple Grilled Salmon and Pineapple Salsa

Sorry it took so long to post more recipes....We enjoyed this for supper tonight. It was delicious. Hope you will try it out!



Maple Grilled Salmon

1 cup maple syrup
3 Tablespoons orange juice
2 Tablespoons butter
1 teaspoon soy sauce
1/4 teaspoon salt
6 salmon fillets

In a small saucepan, bring syrup to a boil over medium-high heat. Boil, until reduced to 2/3 cup (about 5-6 minutes). Stir in orange juice, butter, and soy sauce; remove from heat.
Sprinkle fillets with salt. Brush with half of maple mixture. Grill, covered w/ lid, over high heat, basting occasionally w/ maple mixture, 4-5 minutes on each side, or until fish flakes w/ fork.


Pineapple Salsa

1 fresh pineapple, diced
1 small-med red bell pepper, chopped
1 small-med green bell pepper, chopped
1 to 1 1/2 tablespoons finely chopped red onion
1 tablespoon minced fresh cilantro
1 to 1 1/2 tablespoons lime juice
1 teaspoon sugar

Combine all ingredients in a bowl, cover and refrigerate until ready to serve.


This was the rest of our meal..steamed broccoli and fried corn to go along with the salmon and salsa.

Thanks for sharing this recipe! My husband was looking for a great salmon recipe! I will have to try this one! And as for weaknesses...mine is shoes too! So I don't see anything abnormal at all about the pic below! That is a girl after my own heart! LOL! :) ~Rhonda
