A Southern Treat.....Pineapple Casserole

This recipe might sound strange to some, but it really is very delicious. I like it as a side dish, but many like it as a dessert.



Pineapple Casserole

1 cup sugar
6 tablespoons flour (all-purpose)
2 cups shredded sharp cheddar cheese
Two 20 oz. cans pineapple chunks or tidbits, drained..reserve 6 Tbsp of juice
1 cup Ritz cracker crumbs
1 stick butter, melted

Preheat oven to 350 degrees. In mixing bowl, combine sugar and flour. Gradually stir in cheese. Add pineapple and stir well. Pour mixture into a greased casserole dish. Combine cracker crumbs, butter and juice and spread on top of pineapple mixture. Bake for 25-30 minutes or until golden brown.

Hey, Alyce! Oh my...my family has been doing this pineapple casserole for years too. It's one of our faves at holiday time, esp. Thanksgiving and Easter with ham.
